Casein Free Quickbreads

I love making quickbreads in the winter. I think it’s the way it makes the house smell – sweet and delicious aromas of warm baked treats like pumpkin bread, banana bread and carrot cake are my very favorites. When my mom was diagnosed with Celiac disease, mastering a great gluten-free quickbread was one of the first missions on our long list of recipes to conquer. After several attempts we did manage to create a terrific tasting quick bread indistinguishable from the gluten-variety. Quickbreads are actually quite simple to convert to gluten-free mostly because they don’t require a ton of gluten-free flour and they usually have quite a bit of added moisture with the star ingredient, be it pumpkin puree, carrots, banana, or other fruits.

Although our focus at Glutenfreeda.com is foods without gluten – we are aware that many of our readers require a casein free diet as well. The great news is that these same quick breads can be easily made to be gluten-free casein free with the simple substitution of soy milk and any other milk substitute.
