Turkey Tacos

Ingredients:
- 4 cups cooked turkey, shredded
- vegetable oil
- 1/4 cup onion
- 1 minced garlic clove
- 1/4 cup fresh, chopped cilantro
- 1/2- 1 teaspoon chili powder
- 1/4 teaspoon ground cumin
- salt
For tacos:
- 12 corn tortillas
- 1 cup white cheddar cheese, grated
- 1/2 cup chopped onion
- 1 cup chopped tomatoes
- gf salsa or pico de gallo
- Sour cream (optional)
Directions:
For turkey:
Saute onions in vegetable oil until translucent. Add garlic and saute during the last minute, remove and set aside. Add turkey to the skillet and saute until nicely browned. Add chili powder, cumin and cilantro and salt to taste.
For tacos:
Cover bottom of a heavy small skillet with about 1/8 inch of oil. Heat until very hot and add tortillas one at a time. Cook totillas 1-2 minutes on each side, removing from pan with tongs. Tortillas can be patted with paper towels to remove some of the oil.
Serve ingredients separately and let everyone build their own tacos.
