Brown Rice with Scallions & Pecans

Ingredients
1-1/2 Tablespoons unsalted butter
1/4 cup onions, chopped
2-1/2 cups gf chicken stock
1 teaspoon salt
Bouquet garni
1 cup brown rice
1 large scallion, sliced
2 Tablespoons pecans, toasted
Salt and freshly ground black pepper
Directions
Preheat oven to 350 degrees F.
Melt butter in an oven-safe saucepan over medium heat. Saute onions until transluscent. Add rice and saute for
1 minute. Add chicken stock, 1 teaspoon salt and bouquet garni. Bring to a simmer.
Cover and bake for 45 minutes to an hour at 350 degrees F.
Stir in toasted pecans and sliced scallions before serving.
Tips
Bouquet garni is a mixture of herbs, typically celery leaves, bay leaf, thyme, and Italian parsley. These are tied together in cheesecloth and removed from dish before serving.
