Chipotle Stuffed Meatballs {GFCF}

Chipotle Stuffed Meatballs {GFCF}
1 lb ground beef
1 egg, lightly beaten
1 Tbsp uncooked long-grain white rice
1 1/2 tsp salt
1/2 c onion, finel diced
3 hard boiled eggs, quartered

1 1/2 c chicken broth
1 c tomato sauce (canned is fine)
2 chipotle chiles in adobo sauce (canned)
1 garlic clove, minced
1 bay leaf
3 Tbsp chopped cilantro

1. In a medium bowl, combine ground beef, egg, rice, salt, and onion– to form a loose mixture. Form meat into 12 thin patties, about 3 inches in diameter. Place one of the hard boiled egg quarters in the center of each patty and press the patty around it to form 12 meatballs. Cover and refrigerate while you prepare the sauce.

2. In a blender or food processor, combine chicken broth, tomato sauce, chipotles (and sauce), and garlic– blend until smooth. Pour sauce through a strainer into a medium saucepan, add meatballs and bay leaf and bring to a boil, then reduce heat and simmer. Cover pot and cook meatballs in the sauce, turning occasionally, until they’re cooked through– about 25 minutes.

Sprinkle with cilantro and serve over rice with grilled pineapple.
