Prosciutto-Wrapped Roasted Asparagus {GFCF}

Asparagus wrapped in Prosciutto

GFCF Asparagus Spears Wrapped in Prosciutto
12 asparagus spears (1/4-inch thick)
6 slices prosciutto
2 Tablespoons extra virgin olive oil
Freshly ground pepper

Preheat oven to 350°F. Trim the asparagus by bending each spear near the bottom until the woody ends snap off.

Slice the prosciutto in half lengthwise to make 12 long, thin strips. Starting at the base, wrap one strip around each asparagus spear, moving on a diagonal.

Place the wrapped spears on a rimmed baking sheet lined with parchment paper and lightly drizzle with extra virgin olive oil. Roast for 12-15 minutes or until asparagus is tender and the prosciutto is crisp.

Transfer the asparagus to a plate and sprinkle with freshly ground pepper (to taste).
