Old Fashioned Spritz Cookies {GF & GFCF} — {Day 4} 12 Days of Holiday Cookies}

It’s already Day 4 of our 12 Days of Holiday Cookies! I don’t know about you, but I just can’t believe it! Going the traditional – if not retro – route this morning, we’re talking Spritz Cookies or Spritzer Cookies. A simple, buttery dough, often flavored with lemon, almond or straight up vanilla and colored for the holidays, these little gems are made in a cookie press (like these!). My favorite part? You can customize the heck out of this batter! Add 1 Tbsp (gluten free) Matcha green tea powder , or 1/4 tsp lemon extract / freshly grated lemon zest,  1 Tbsp cardamom powder  – the possibilities are virtually endless! And then the filling! Make mini sandwiches using two cookies + lemon buttercream, chocolate ganache, caramel sauce — dip the cookies halfway into melted chocolate for a ‘Black & White’ look; add  1/4 tsp jam to the center of each cookie before baking or use the jam to create a little Linzer-style sandwich. Gluten Free Spritz(er) Cookies
Makes 5 dozen cookies

1 cup (2 sticks) unsalted butter, at room temperature
1/2 cup sugar
2-1/4 cups gluten free all-purpose flour blend
1/4 tsp baking soda
1/2 tsp kosher salt
1 egg
1/2 tsp vanilla extract

Food coloring  (optional)
Gluten free sprinkles or sanding sugar (check out India Tree for a ton of natural, gluten free cookie & cake decorating supplies!)

Preheat oven to 400°F.

In a large bowl, using an electric mixer, beat butter and sugar until light and fluffy, about 4-5 minutes. Beat in egg and vanilla until incorporated. In a separate bowl, whisk gf flour, baking soda, and salt.

Add dry ingredients to wet ingredients, stirring with a wooden spoon until combined. (If you prefer you can color the cookie dough by adding a few drops of food coloring and mixing until color is evenly distributed. We divided our dough into 3 bowls and made 3 different colors).

Spoon dough into a cookie press. Form desired shapes on an ungreased cookie sheet. Decorate with chocolate chips, gf candies, sprinkles, nuts, or dried fruit, if desired. Bake for 5-8 minutes or until set but not browned. Immediately remove from cookie sheet and cool on racks.

Dairy Free // GFCF // Vegan Spritz Cookies
1 Tbsp ground flax meal
3 Tbsp water
1 1/3 cup gluten free all purpose flour blend
3/4 cup sugar
1 tsp gluten free baking powder
1/2 tsp salt
1/2 cup dairy free butter (like Earth Balance Butter), softened / at room temperature
1/2 tsp vanilla extract
1/2 tsp almond extract

Preheat oven to 400°F.

Combine ground flax and water — let stand for 10 0r minutes until the mixture has taken on a gelatin like texture. In a small bow, whisk together gluten free flour, sugar, baking powder and salt. In a separate mixing bowl or the bowl of a stand mixer, beat butter, sugar and flavoring until fluffy, then beat in flax. Add dry ingredients to butter mixture and mix until just combined. Bake for 10-12 minutes or until golden brown around the edges. Cool on a rack and enjoy!
