Lace Cookies – Kick Off 12 Days of Gluten Free Holiday Cookies!

Sweet treats just as much a part of the holiday celebration as twinkling lights and evergreen boughs. From peppermint candy canes to figgy pudding, panettone to eggnog (lattes…mmm), the holiday celebration simply wouldn’t be complete without a variety of treats to give and receive as gifts, dazzle the dessert table at holiday parties and of course, leave for Santa Claus on Christmas Eve.
This year, to kick off our 12 Days of (Gluten Free!) Holiday Cookies, we’re featuring a old-made-new-again standby: Lace cookies. These almost-flourless cookies combine all the ‘good stuff’ (almonds, butter and sugar) into thin, crisp, lace-like cookies that are delicious on their own, dipped in coffee or hot cocoa or served up with a big ol’ scoop of ice cream.
Gluten Free Lace Cookies
Makes 2 dozen
3/4 cup (1-1/2 sticks) unsalted butter
1-1/2 cups finely chopped almonds
3/4 cup sugar
1 Tbsp gluten free flour
2 tsp grated orange peel
1/2 tsp salt
1 large egg, lightly beaten
Preheat oven to 325° F. Line a large baking sheet with parchment paper.
In a heavy, medium saucepan, melt 3/4 cup butter over medium-low heat. Remove from heat. Stir in nuts, sugar, flour, orange peel and salt, mixing well to combine. Stir in egg.
Drop batter by generous tablespoonfuls onto the prepared baking sheet, spacing 3 inches apart (cookies will spread as they bake!)
Bake cookies until lacy and golden brown, about 10-15 minutes. Gently slide parchment paper, with cookies, onto cooling rack; cool completely. Transfer cookies to paper towels. Repeat with remaining batter; lining cooled sheet with clean parchment for each batch of cookies!
