Italian Polenta Cookies {GFCF} {Day 10} 12 Days of Holiday Cookies

Orange Polenta Cookies
Yields 2 dozen cookies< // Gluten free & Milk/Casein/Lactose/Dairy Free {GFCF}/i>

6 Tbsp unsalted butter (or non-dairy butter), well chilled
1/2 cup polenta
2 Tbsp gluten free all-purpose flour
1/3 cup sugar
Zest of one orange, finely chopped
1 large egg

In a medium bowl, combine polenta, gf flour and sugar. Cut in butter until it resembles coarse meal. Add egg and orange zest; stir until thoroughly blended. Cover with plastic wrap and chill for 1 hour.

Preheat oven to 375°F.

Line a baking sheet with parchment paper. Drop small teaspoons of batter onto cookie sheet, about 2 inches apart. Bake 8-10 minutes or until edges are golden. Let cool for 15 minutes before serving.

Variations:
+ Add 3/4 cup chopped dried fruit: apricots, currants, cranberries, wild blueberries, cherries — the possibilities are endless!
+ Before baking, make a thumb-sized indent in the top of each cookie; spoon in 1 teaspoon of your favorite seedless jam (strawberry, plum, peach, you name it!)
+ Dip the finished cookies halfway into a bowl of chocolate ganache for a decadent addition!
