Dairy Free (GFCF) Chocolate Peppermint Squares

GFCF Chocolate Peppermint Squares // Gluten free & Casein / Milk / Dairy Free
Serves 6-8

2 oz gluten free bittersweet chocolate, divided then melted
1/4 c + 3 Tbsp dairy free butter, divided and softened (EarthBalance works well!)
1/2 c sugar
1 egg, lightly beaten
1/2 c gluten free flour
1/4 c walnuts, coarsely chopped
1 c powdered/Confectioner’s sugar
1 Tbsp water
1/4 tsp peppermint extract
1 ounce gluten free bittersweet chocolate

Preheat the oven to 350°F. Grease and lightly flour an 8×8 inch pan with gluten free flour.

Cream together 1/4 cup butter substitute, sugar and egg in a large mixing bowl or in the bowl of a stand mixer. Stir in 1 oz melted chocolate, gluten free flour and walnuts. Pour mixture into prepared pan and bake for 20 minutes or until a toothpick inserted into the center comes out clean. Remove baking dish from oven and set aside to cool.

Meanwhile, combine 2 Tbsp butter substitute, powdered sugar, water and peppermint extract. When cake layer is cool, spread the peppermint mixture over the top.

Finally, melt the remaining chocolate and butter substitute, stirring well to combine. Pour over the pepper layer and smooth with the back of a spatula. Rerigerater for 1/2 hours before cutting into 20 1-inch squares. Enjoy!
