Product Review: Enjoy Life Chocolate Chips & Cookie Recipe

First of all, I have a confession. I am a chocolate fiend. Semi-sweet, bittersweet, milk, 76% dark – I love it all! And this cocoa addiction manifests itself every week in the form of chocolate chip pancakes, studded with semi-sweet chocolate chips. Now, the idea of a dairy-free chocolate chip didn’t seem unreasonable — just maybe brittle or chalky. I was so wrong. Enjoy Life’s Semi Sweet Chocolate Mega Chunks are perfect for cooking and baking, the classic semi-sweet chocolate chip taste in huge chocolatey chunks of deliciousness!

Gluten free, casein/dairy free, vegan, Kosher Parve, soy free, nut free, no trans fat and no artificial ingredients- whew! What a mouthful — of tastiness!

Best Ever Gluten & Dairy Free Chocolate Chip Cookies

2 cups almond flour
1/2 cup tapioca or arrowroot flour
1/2 teaspoon kosher salt
1/2 teaspoon baking soda
1/2 cup Earth Balance butter at room temperature
1/2 cup agave nectar
1 tablespoon vanilla extract
1 egg
1 cup Enjoy Life Semi-Sweet Chocolate MegaChunks

Directions

Preheat oven to 350 degrees.

In a large bowl, whisk together the blanched almond flour, tapioca flour, salt, and soda.

Beat butter on medium-high until light and fluffy. Add in the egg, vanilla, and agave. Beat until well combined.

Pour the wet ingredients into the dry ingredients and stir well. Fold in the chocolate chips.

Line a baking sheet with parchment paper. Using no more that 1 Tbsp. of batter, form cookies on parchment paper and space at least 2 inches apart.

Bake for 7 to 10 minutes or until golden brown.

Remove from oven and cook by placing parchment sheet (and cookies) on a wire rack.
